Are there tax preparers and accountants that will do my taxes with my last check stubs of the year?

That is acceptable by the IRS and shouldn't be a problem.
You don't have to wait but they may be some info shown on the w2 not on last pay-stub such as health benefits deductions, pension plan contributions other deductions.
If you don't think you have any of these then i guess there's no reason to wait. If your tax preparer uses a computer to send your return you will need your employers tax id# which often is not shown on a pay stub.
I'm curious why you asking this time of the year?
W-2's don't have to be mailed out till end of January but you cant file before the beginning of January.

if your last pay stub of the year has all the required information your taxes can be prepared ahead of time, almost any preparer can do it, however until your w-2 come in you can not file your return either through an preparer or Thru e-filing as there is certain information contained on that particular document you will need or submission.
if you want to e-file you can use one of the software programs available an enter the information requested and save it ready to go except or the missing info from your w-2. FYI not all companies are set up for employees to e-file so check with yous before buying he software
If you want to e-file (faster refund), you have to wait for the W2. If you want to paper file, you can do it the day you have your last paystub, provided your accountant has the software to do so. Many accountants don't have their software installed this early. Also, many states require the accountants to e-file the state return, and they can't efile without the W2.
On the whole, it's best to wait for your W2s if you want someone else to do it or if you want to get your money faster.
