It really depends on what you like to do and how much effort and upkeep you are willing to commit to the project. You might want to do some studies to see if there is an interest in any of your ideas. What good would it be to build a facility if there is no one to use it? It would also depend on what kind of return you expect in what period of time. Also, what is the land zoned for right now? What kind of access does it have and what would you have to have installed by way of basics such as electrical, sanitation and water? How would you get your supplies in and from where? What about employees? How well are you able to handle being an employer - what do you know about the rules, the law, labor management?
What do you know about farming? What is the weather good for in your area? Who would you sell to? How would you ship what you produce? How would you resupply? What if you had a bad year? Two bad years?
I would suggest you draw up 4 papers with your different ideas on each one and then develop each one to get an idea of what you know, what you need, what you need to find out, and a very rough cost idea.

I would grow corn and sell it to whatever companies are making E85 ethanol, because it will be replacing gas VERY soon. Corn is about to become a HOT commodity.

Organic farming is picking up! The corporate thing sounds promising. What about having city kids come visit a working farm? Best of luck, wish it was me with all that land!
It depends where you are located, but if you are so inclined, if you start an herbal organic farm you can do really well. You can charge a premium for organic (check with your state, you need to be certified organic) produce, you can't use pesticides or commercial fertilizers, but you can use manure and other natural fertilizers (it's not so gross, it's usually not hot and if there ar farms around you, you can borrow their manure spreader once a year).
animal farming is tough unless you go with something exotic like alpaca, buy a couple of preggie females for $100k, but you have to know what you're doing.
15 acres isnt enough to do any standard crop farming -
15 acres isn't enough for a corporate retreat unless you're in a very rural area - most corporate retreats have at least 100 acres.
Grow ginseng, big money in that crop
plant christmas trees. They will sell like hot cakes during the christmas season. The ones remains, just trim them and they will sell next year. You'll make a fortune.
Hi,,,, 15 acres is not a lot.. so you need a high yeld crop with a good cash return on your expenses,,,,,
I suggest you plant Corn,,, and inter-mix with Marijuana,,, good high grade stuff.. you mix it so it is difficult to see from the air and the road...
I promise you can use the corn to write off as a loss ,,,, and put the rest in your pocket as a profit..
