What is the best way to entice vendors to sign up for my bridal event?

You need to let them know how many people are expected to attend, where you are advertising, etc. They need to know what they are getting out of it that they themselves are not already doing. Sit down and put together a real "package" for your vendors. These are businesses that already cater to this industry so you need to let them know how many potential customers you are going to put them in front of. How are you going to plan the space? what kind of display area they will have (and what you provide) along with the placement withing the show.
Since you do not seem to know what they may want, I would pick a vendor that you would like to have there and have them help you put together the package by getting a better understanding of their needs in exchange for free space at the event.

just do some research into this. The last thing you want to do is over promise and under deliver. You will have a very hard time the next time and people will find another place to spend their advertising dollars.
