Go to other coffee houses and see how they manage customer flow and traffic problems that might happen if things are arranged oddly. Ever been in a Subway sandwich shop? One person takes your order, the next puts it together, and the last collects payment. This could make it easier if you have high volume, but would be extra expense if things start slow. Idealy you want the creamers, sugar, and other stuff that people put in their coffee to be out of the way of the line waiting to place their order and the line receiving their coffee. If you have one person taking orders, making orders, and handing out orders things will be slower, more chaotic, and a pain in your customer's butts. You need at least two people to mind the counter at one time during busy periods. I hope this helps.
