I'm moving and have ordered checks for the new address. In the meantime I have dug up some really old checks (from like 2 apartments ago). Is it ok to put a label for the new address over the old address on those checks? Just until the real printed ones come in the mail?

no..i dont know any business that would accept those..just cross out the old address and write the new one over to the side or in the memo line
It is fine as long as it does not disturb the routing and account numbers on the bottom of the check.
