Do any credit cards pay interest if you overpay your bill?

Not exactly, but Bank of America has a debit card program that rounds up all you purchases to the next dollar and puts the difference in an interest bearing account. So in essence you are overpaying your account by the amount of the round up and earning interest on it. See weblink below.

No, they just issue a refund if you don't use the credit. Depending on the company, they might not do it immediately, either. Seems they should pay interest, doesn't it? :O)
Nope but it's fun to do anyway. We regularly pay a couple of bucks extra just to mess up their accounting system.
