How to write a letter for a recipient to sign for "no further liabilty" after check is received?

Answer:
check with an attorney but i would think you could write that on the check note line or paid in full, no further liability. When they cash the check it is a contract they have agreed to.
The laws vary on this depending on where you live. You should have a local attorney do this for you.
