we work with firms in India..always in rupees and we have to convert. Don't know that there's anything special from Italy<>India relationships
You would trade in the currency of the country you are buying from. I am in the USA and do a lot of purchasing from the UK .. so I pay in the GBP (pound). xe.com is a good site for currency conversion. Hope that helps
