Some companies still put the entire card number on receipts. Be safe, don't assume anything.
Save in a box or bag until the end of the year. Then shred.
Saving for tax purposes is only necessary if anything you bought is tax-deductible - like making a charity donation or something.
As far as identity theft - I rip 'em up or feed 'em to the shredder once they're on my statement. One can never be too safe, ya know? (Maybe that's just me - I trust no one.)
You don't have to keep the credit card receipt, you should have a sales receipt for most purchases/expenditures. You could use your credit card statement as documentation for the Internal Revenue Service.

All credit card reciepts x out all the numbers except for the last 4 numbers. There is really no way to become a victim of identity theft from just the receipt. But, if you don't want that worry, just rip the reciept in 2 or 3 pieces.
I may be a bit paranoid, but the only paper I throw out without shredding is paper plates. I even shred old shopping lists.
