I have had Amex gold for over 2 years and never been late in paying well except one time I was a day late and I guess they gave me an extra day without penalties. What would happen if you don't pay your full amount?

Even if you pay your whole bill off except for a single peny they will charge you interest on the whole balance. I wouldn't chance not paying it off by the due date especially if they have already let it go once in the past and you aren't planning on paying it all this time.
