What is the function of a corporate seal in establishing a new business?

To put on your official corporate documents.

It is not required unless your articles of incorporation or bylaws or state laws require it.
The theory is that you affix it to all important corporate documents to make them "official". In realty it is has very little meaning. Generally, regulated to the bottom drawer in the big boss' desk.
