What do employers think if you say you had a personality conflict with the manager and you quit?

They'll assume you're difficult. Never say this in an interview. No matter what you feel about your old boss, when some one asks why you're leaving a job, you say you don't feel challenged or something like that. Otherwise they'll wonder what you'll say about them in your next job interview.
You are hard to get along with.
It depends on the employer and the way you come across in the rest of the interview. If you come across well, they might well give you the benefit of the doubt. If you seem aggressive or difficult, they would probably assume your manager had a point !
Definitely not a good answer, in fact one that will sink you faster than the Titanic. How about Their business ethics and mine did not agree, and I could not continue ethically with those practices. If asked what the problem was state you really would not like to address that fact or situation out of respect for your former employer
