Go the official route. Opening your paycheck is illegal. If you have an HR department you should file a complaint and she will have to get at least a warning from them. However - if more colleagues encounter stuff like that or you have more examples which can be proven then they can fire her.
And so I would recommend to make that you goal. Document everything when she is doing stuff like that, invading your privacy, discriminating and whatever. Write it down with date and have a witness if possible confirm.
And with that go to HR again, present this documentation and ask them to stop that. HR is usually very afraid of lawsuits. One of their key concerns and job is to avoid that employees file a lawsuit which they could win where the company has to pay a lot of money.
So - if you are not the only one and this lady is truly that badly then fight back together with your colleagues.
Also when there is no HR department there is certainly someone in the company who is interested in not having a lawsuit being filed. That paycheck opening is really a good one because in a way the supervisor prepared her own downfall with that. . Tell that person about it, perhaps it is a CEO or VP kind of type.
Stay professional with all what you do, document and involve your colleagues are equally terrorized.

You are giving this person way too much power over your life. So she's a jerk - lots of people are jerks - don't let her negativity rub off on you. Negativity breeds negativity and it sounds like to me you are falling under her "spell".
There is alot you can do to keep things professional - stop discussing personal issues at work, including over the phone; do not comment when the "boss bashing" begins; improve your productivity to the company thus becoming eligible for promotion; set personal improvement goals and stick to them;
Keep things professional and polite - you can be terminated "at will" and revenge won't pay the bills.

But just for fun:
You can leave her a note that requests that she keeps her paws off your personal things. She might be your boss, but privacy laws are definately powerful as a method of persuation.
Also little things.if she's obessessed with neatness, don't be sloppy outright, but lave a few things annoyingly out of place. Leave little notes to yourself, that would be offensive to her.example, meeting Amy at Fitzgeralds at 7.hope she shaved armpits.

Wow, I would want to strangle this person. I'm pretty sure that it is illegal for her to open any of you mail or touch your personal things. If I were you, I would get one of those little cameras that they use to spy on babysitters and set it up in the space that you share. Put something in there like a small box or container marked with your name, mark it as private..she sounds like the kind of person that has to know everyones business, make it tempting.. then catch her in the act of going through your things. Surely you would be able to get her fired, maybe even arrested for trespassing. I work at a lawyers office. I'll ask one of the lawyers here when I get a chance.She's got some balls, wow.

Put scotch tape on the underside of her mouse so the ball won't move.
Try "Password Securing" someone's screen saver. First I suggest changing the screen saver to "Scrolling Marquee" and inserting your own word or phrase, "Mr. Jones (president or supervisor) eats **" or something to that effect.
A prank that is so simple to do and yields such nice results. Simply pop out the 'M' and 'N' keys on someone's keyboard and reverse the two. Any flat tool will work. Just pry it with little pressure and they will easily come right off. Then just sit back and watch the confusion.
Another gem is to do a "Print Screen" of the user's desktop, and then paste the image from the clipboard to the photo program, and save the image as a bitmap. Then, set the 'snapshot' of their desktop as the actual desktop wallpaper. (You'll have to hide the Windows status bar, and move all their desktop icons into a folder, which you can hide conspicuously in the corner or something). The user will see their desktop as always, but everything on it will appear to be frozen when they try to click on it. sending them into a rebooting and virus scanning fit.
