Why do bartenders brag about having experience? Theyre just like robots who fill drinks??

Asking thsi question shows that you don't have any experience as a bartender. Someoene with experience would be able to tell you what a difference it makes to know how to deal with clients, what to pour etc. It sounds VERY simple; try it, it is a tough job.
Its two things, personality and memory. Experience helps to improve both through different ways. People want to go to bars where they can have a little chat with the tender, and they sure want to make sure they get their complicated drinks made right. A bartender without much experience will probably get simple drinks mixed up and not be able to take multiple orders at once. They also will usually lose non-regular customers if they don't talk much and properly.
gotta know how to make a purple mind eraser. have to work the crowd in a smaller setting or handle the commotion of a larger club. it's not rocket science but ya know.
