Answer:
You could say you feel that you've reached your maximum potiental in your current job and that you'd prefer something more stimulating and demanding to apply yourself to.
You are interested in joining this new company because you feel that its dynamic and that it has as much to offer you as you have to offer the company.
They should hire you over other candidates because, whilst you do not know what the other candidates can bring to the company, you can only speak for yourself and you can bring experience, enthuasiasm and dedication to the company if you should be lucky enough to get the job.

There is not enough of a challenge and little scope of advancement. I once used the reason " Everwhere I've ever worked, there has always been a Scottish Engineer in charge" "Even Captain Kirk had one on the Enterprise". Just leave a lasting impression!
