Has anyone ever taken Wilton Classes at the local Jo-Ann's or Michael's, or knows anyone who has?

You do get a certificate for each course you complete. There are three courses and four classes for each course. Each month, Wilton runs a different special (Buy a kit and the class is a Penny, Two people for $25, etc.) and it's to be advertised heavily in the Wilton area.
As for finding a job and whether the school helps with finding a job, then the answer is no on both. After completion of all three sections, you can contact Wilton and find out what you need to do to be put on their list as a Certified Wilton Instructor. Upon completion of the Instructor Certification, you will then be eligible to teach Wilton classes at any authorized location (Michael's, JoAnn's, etc.).
I don't know how JoAnn's operates, but I do know that at Michael's, you would report directly to the Event Coordinator. You are responsible for letting the EC know your class schedules and what days each month you will be doing demos. The pay can be pretty good depending on how many people sign up for your classes (you have a base pay + a portion of what each person pays for these classes).
The classes are wonderful and Wilton is extremely supportive in everything.

Whoa there? School? JoAnns & Michaels are retail craft stores - not accredited educational companies.
They offer classes to promote the products they sell and to provide training on specialized crafted items.
Taking a class on Wilton cake-decorating will be fun and you will learn alot. It will not enable you to get a job as a caterer, bakery assistant or even self-employed baker.
There are courses in food preparation, culinary arts, etc. offered at community colleges, university level programs and even "cooking schools". Pursue these level programs only if you are seriously interested in becoming a professional chef.

The Wilton classes at craft stores are for hobbists not for career chefs. You get a certificate but it only means that you paid for the class and showed up. It is not a measure of your skill. Classes are usually $25 but they run specials all the time because the stores don't really make money on the classes but on the sale of products. Having taken a Wilton class at a craft store will not help you find a job and you will not get any help from Wilton in doing so. Wilton does offer "real" classes at their store in IL if that is something you are interested in.
"Certified Wilton Instructor" - there is no such thing. Wilton does not certify its instructors. All it takes to become a Wilton Method Instructor is completing an online form and showing them some pictures of your cakes.
