Nobody knows. Thousand, Hundred Thousand, 1 Million?
It does not matter. It does matter though which are the most important search engines in your market space.
Lets say the United States for example. The general search engines that really matter are: Google, Yahoo!, MSN (Live) and Ask.com (in that order). Those cover 99% of all searches. The remaining 1% is shared by the thousands or more other search engines.
If a search engine is a perfect fit for your business, then you should not ignore it, even if it only has 0.00000001% of market share. Those people who use this search engines are already pre-filtered audience for you versus the generic search engines where the majority of people are not a right fit for you.
You can look at it the same way in reverse from a user point of view.It comes down to the same principles.

Every website has the capability of providing it's own search engine. Thus, this isn't a question that can possibly be answered correctly. Millions.

There are alot: Google, Yahoo, Ask, firefox has one it doesn't really matter which one you use.

What you need to focus are the web sites that will bring you quality traffic.
For example:
Lets say you are in Canada. You need to focus on MSN.ca (sympatico.ca) and less on MSN.com.
Search engines want to be "right on the money" and that is why they try to narrow the searches as much as possible.

is a "small" search engine for businesses in Michigan state.
A great web site to be listed on if you wish to do business in Michigan state.
Anyone who advertises they will submit you to more than 12 search engines and directories is submitting to what are known in the industry as FFA's (free for alls), classifieds, 404's (errors), not founds (pages which no longer exist), or foreign language sites.
It is well know amongst online marketing experts, there are less than 12 working search engines and directories on the Internet today.
